Conscientious Consumption: Real Food Challenge

Real Food Challenge: We don’t know about you, but when we were in college our diet consisted primarily of pizza, bagels, and boxed mac ‘n cheese. Fortunately, today’s students are far more aware of nutrition than we were, but on the downside, most school dining halls aren’t keeping up with this shift in health consciousness. The Real Food Challenge (RFC) was created to help students mobilize change in food programs on campus, with tips on organizing and educating. After all, colleges and universities reportedly spend over $4 billion/year on food – a significant part of the US’ food system – so if schools were to get on board the locavore movement, that’s a lot of energy (and money) that could be saved.
